Pacifico Sur, Cabinet Sauvignon

Hand-harvested, the grapes are fermented in stainless steel tanks between 28-30°C for seven days. Post-fermentation, the wine is left to macerate on its skins for five days to aid further extraction of flavour and body. The resulting wine is aged for three months in stainless steel prior to bottling.

Tasting Notes: –
Intense aromas of succulent blackberries and ripe bramble fruit in a deliciously smooth style. Full-bodied with sweet tannins providing great structure and weight. Rich red berry flavours on the palate leading onto a delicate smoky finish.
Food Pairing: –
Great on its own, but also good with a rich casserole or beetroot risotto.
